March is a month when the blooming season starts. Spring is a time where we are transitioning to warmer weather, which is also the best time to start thinking about all the varieties of food we can cook. We need to take the advantage of the juicy fruits and vegetables and try out some healthy and delicious food. 

 

1. Spaghetti Al Limone with Asparagus

Spaghetti is the first thing we all learn to cook as children. This dish is simple with a citrusy olive oil sauce that brings out the spaghetti’s limber and delicate natural taste. This dish is best to eat on a balcony on a sunny day as it makes you feel fresh and it’s so flavourful and utterly delicious. This meal takes about 15-20 minutes of cooking time.

2. Shrimp Ramp-y

The name says it all: shrimp in garlicky, pungent, buttery sauce with ramps. This combination may seem like overkill but the garlic becomes mellow while the ramps stay pungent. This meal is a quick delicious dinner you can cook for your family at any time. The best time to eat seafood is through Spring to Autumn. You could also add spaghetti to the shrimp. This meal takes about 20 minutes to cook.

3. Chicken Meatball in Spring Vegetable Broth

Nothing better than a healthy warm soup, while watching the sundown with your family. This meal is easy to make and tastes delicious. A small tip for the meatballs if you are making them homemade is to poach them. This keeps them very tender and their flavour light. This meal takes about 1 hour and 30 minutes to prepare.

 

4. Rhubarb-Brown Butter Bars

Trying to stay healthy? Then try this granola bar with a surrounding layer of sweet-tart rhubarb jam. Can use any combinations of nuts you like. A hibiscus flower is a great addition to the granola bar. This snack is simple and the jam is excellent. This snack takes 1 hour and 15 minutes to prepare and bake. 

 

5. Lacy Cornmeal Pancakes with Strawberry Compote

A meal can’t be more seasonal than these delicate, easy and delicious cornmeal pancakes with strawberry compote. One tip for the strawberry compote is to add dark rum. This meal is a nice division between sweet pancakes and the soury jam. These pancakes take 30 minutes to cook and prepare.

6. Toast with Lemony Pea Mash

This meal is easy to make and takes only 15 minutes of preparation. The bread can be any kind of choice as baguettes, toast, crostinis, ciabattas. The preserved lemon gives this pea mash an intense pop of salty and citrusy flavor, which varies the flavour when eating.

7. Green Garlic and Pea Soup with Whipped Cream

This seasonal vibrant green soup is best to eat for lunch. A tip for when cooking this soup is to boil the water quickly over high heat, but undercooking the peas to preserve their colour. This soup takes around 30 minutes to cook.

 

8. Poached Eggs on Toast with Ramps

When ramps are finally in season this meal is great to make for breakfast or dinner. This dinner tastes really good and is flavourful. You can add spring onions instead of ramps. This dish is better with cheese in it so ricotta, cream cheese or oozy burrata are great decisions to spike the food. This meal takes 20-30 minutes to cook.
